What is kabsa ?

Saudi Kabsa with chicken is one of the most famous Gulf food in general and Saudi in particular, and it is now one of the most famous dishes in the Arab world as whole, due to the delicious taste and easy preparation method, as well as diversify of its components greatly, and can be made Kabsa with chicken or meat,  As for the rice used to make the kabsa, it is a long-grain basmati rice. Returning to the origins of the kabsa, most people search for the way to make the Saudi kabsa with chicken, given that the Saudi method in particular is the origin in preparing the kabsa.
It is necessary to first mention the ingredients  for its preparation and it is known that the Saudi kabsa with chicken can be diversified in its components by adding some vegetables and spices and controlling its amounts and it takes quarter of an hour to prepare these ingredients, it is enough for four to six people and the amounts can be doubled according to your wish:


Three cups of Basmati rice.
Two kilograms of chicken.
Two teaspoons of soft coriander.
A tablespoon of mixed spice.
Tablespoon of cumin.
Tablespoon of salt.
A teaspoon of turmeric.
¼ teaspoon of black pepper.
Three large chopped tomatoes.
Four tablespoons of ghee.
Three large chopped onions.
Six lobes of cardamom.
Three tablespoons of tomato sauce.
Chopsticks from cinnamon.
Four bay leaves.
Six grains of clove ram.
Three pieces of green chili pepper.
Ten grains of black pepper .
1 tablespoon of oil, and a quarter of a teaspoon of turmeric to "chicken roasting ".

Saudi Kabsa is one of the easiest meals to prepare and doesn't need much time, but it is necessary to be focus in steps and arrange them in order for the dish to be perfect and this method of preparation requires forty-five minutes in order for the dish to be ready to eat and here comes the method of making the Saudi Kabsa with chicken:

Wash the rice with cold water and soak it in warm water,
Cut each chicken into four halves,Put coriander, spices, black pepper, salt, turmeric and cumin in a small bowl, then stir until the spices are homogeneous.

Sprinkle a teaspoon of the spice mixture over the chicken, and stir the chicken pieces until they are covered with spices.
Put the ghee in a large skillet and raise it over medium heat until it warms, then add the onions and stir for several minutes until they  become golden color.

Add the chicken halves to the pan and turn them until they turn brown on all sides and become golden color.
Add cardamom, tomatoes, tomato sauce, cinnamon, clove ram, black pepper, laurel and green pepper, immerse chicken in water and leave it on heat for fifty minutes until done.
Take out the chicken pieces from the broth, add a little turmeric and olive oil to it, then fry the chicken in the oven for a quarter of an hour.

Put the amount of four and a half cups of chicken broth in a sauce pan and raise it over the fire until it boils, then add the rice to it and stir gently, leave the rice over the fire until done and leave it on low heat for forty minutes.

Pour the rice into a serving dish, arrange the fried chicken pieces over it, decorate the dish with pine nuts, pistachios, and cashews, then serve it with yogurt and various types of salads.
